Ingredients
1 avocado
2 eggs
1 lime
1-2 tbsp. roughly chopped cilantro
Salt and Pepper, to taste
Method
1. Cut an avocado in half and take out the pit. Using a spoon, scrape out the center of each halved avocado so that it is large enough to accommodate an egg. Then, using a knife, make slices across each half while keeping it in the skin.
2. Season both halves with salt and pepper and a squeeze of lime juice.
3. Place the halves in a baking dish, and heat up broiler. Crack an egg over each avocado half so the yolk sits where the pit was. (Some may spill over the side, so placing foil under the avocado can help in removing it out of the dish).
4.Place under a broiler on low for just a few minutes, until the egg has set to your liking.
5. Remove and sprinkle with a bit more salt and pepper, fresh cilantro, and squeeze of lime to taste. Enjoy with or without toast!
